Balsam fir is a small, fragrant evergreen tree native to the northeastern United States and eastern and central Canada. Its vibrant color, powerful aroma and excellent needle retention after being cut has made balsam fir a popular choice for Christmas trees. Steam distillation of balsam fir needles yields an essential oil possessing a deeply balsamic evergreen aroma redolent of the scent of crushed pine needles.
NEW WORLD CEDAR
Though commonly referred to as cedars, New World cedars like Texas cedar and Virgina cedar are actually junipers, belonging to the family Juniperus. Though different species possess distinctive aromatic traits, New World cedars are generally more aromatic than true cedars, possessing the characteristic aroma of cedar chests and pencil shavings. True cedars, on the other hand, possess a sweeter, balsamic aroma with citrusy undertones.
Juniper is a coniferous plant belonging to the cypress family, ranging in size from small shrubs to tall trees. Its fruit, though commonly referred to as a berry, is actually a seed cone, covered with fleshy scales. Juniper berries are perhaps most well known for their historical association with gin as one of the chief botanical elements responsible for the beverage's distinctive flavor. The aroma of juniper oil is bracing and aromatic with spicy facets and undertones of mushroom.
Petitgrain is an essential oil extracted via steam distillation of the leaves and twigs of the bitter orange tree. The name petitgrain literally means "little grain" and refers to the fact that the essential oil was historically extracted from the small, unripe fruits of the tree. The aroma of petitgrain is woody and green with floral undertones.
Like most citrus fruits, the bergamot orange is a hybrid—genetic research has indicated that the bergamot is most likely a hybrid of the lemon and bigarade orange. Production of bergamot is mostly limited to the province of Reggio di Calabria on Southern Italy's Ionian coast, where climatic and soil conditions are favorable to the cultivation of this small, pear-shaped citrus fruit. Bergamot oil is expressed from the ripe peel of the fruit and possesses a citrusy aroma that is variously described as bitter and tart with mild spicy facets and a complex aromatic elements.
